I just got the BeagleBoard demo running. There was one little problem with the mkcard.sh script. I've detailed my experience here http://elinux.org/ECE497_Notes_on_Kinect.
My next task is to see if I can get the demos running on my own SD.

Dear Mark,
Thank you for your feedback and terrific wiki post.
Currently it is no simple way to run the supplied samples form the SDK image and run it on your existing image.
One thing you can try is move your projects to the SD card you burned Omek Image on, and run them.
(FYI - Our image is running standard Angstrom Linux so if any plug-in or package is missing you can easily download them)
If your projects are not utilizing the Beagleboard DSP it should work.
